Clasen’s European Bakery Named Bakery Operation of the Month for May 2010

 

West Allis, WI—Congratulations to Clasen’s European Bakery located in Middleton, Wis.  The bakery was named the Bakery Operation of the Month for May 2010 from the Wisconsin Bakers Association (WBA).  The business earned the honor for hosting the WBA’s Bakers Forum in May, which is a networking and educational event for WBA members and other baking industry representatives.

 

Michelle Werry currently owns the business, which was started in 1959 by Ralf & Ernst Clasen, Werry’s dad and uncle.  The brothers came over from Germany.  The current bakery location is 12,000 square feet, which includes the production area and retail store.  “Some of our signature items are Sourdough Rye Breads; Sourdough Farmers Bread; Cream Cheese Filled Coffee Cakes; Blackforest Whipcream Tortes; Morning Buns; Buttercream Tortes; and Quiche,” Werry said for a recent interview.  “We produce over 40 breads, 15 coffee cakes, 15 breakfast pastries, eight quiche, 30 tortes, confections, and much more.  It’s all baked from scratch, using no preservatives.  I think overall, that is our specialty:  All scratch, no preservative baking.” 

 

In all, the bakery employs eight bakers, two pastry chefs (full time), and approximately 15 more full-time and 10 more part-time employees.  For more information about Clasen’s European Bakery, visit http://clasensbakery.com.

 

Nominations for Bakery Operation of the Month are submitted to the WBA office for consideration.  Selected operations must include the following criteria to be considered:  Must be a WBA member in good standing; must have made non-monetary contributions to the bakery industry and Wisconsin Bakers Association; have something that qualifies the bakery as an outstanding business; and winner would agree to have the award publicized in the media.

 

In addition, winners of the Bakery Operation of the Month are considered for the Bakery Operation of the Year (BOY) award.  The first BOY award was given in 2001 to recognize an outstanding WBA member bakery operation.  The current Bakery Operation of the Year is Lane’s Bakery & Gift Shop in Madison, Wis.
